    Chicken and Zucchini Hot Salad

    This Chicken and Zucchini Hot Salad stands beautifully on its own, but it can be elevated to a wholesome meal with the right accompaniments. A Bacon and Green Onion Cauliflower Mash would seamlessly complement the salad’s textures and flavors while a Southwest Style Cauliflower Rice would bring a whole new level of enjoyment.

    Ingredients

    Serves: 4 Prep Time: 15 minutes Cook Time: 20 minutes

    • 2 ½ lbs chicken breasts, cut into cubes
    • 5 zucchinis, cut into cubes
    • 3 tablespoon cooking fat
    • 1 tablespoon oregano
    • 1 large onion, chopped
    • 7 tablespoon homemade mayonnaise
    • Juice of 2 lemons
    • 2 cloves garlic, very finely minced
    • 1 head romaine lettuce, washed and shredded

    How to Make Chicken and Zucchini Hot Salad

    Heat a large pan over a medium-high heat and cook the chicken cubes until well cooked. Set aside.

    In the same pan, with the rest of the cooking fat, add the onion and cook until soft, about 5 minutes.

    Add the zucchini cubes and oregano and season with salt and pepper. Cook until the zucchini cubes are soft.

    In a bowl, mix the mayonnaise, lemon juice and garlic.

    Add the hot and cooked chicken, onion and zucchini to the mayonnaise preparation and mix well.

    Add the romaine lettuce, mix well and serve in bowls. This hot salad is delicious topped with fresh almonds.
