Garlic and olive oil bring out the savory side of everyone’s favorite Paleo starch, and the spicy cayenne and red pepper flakes in the chicken turn up the flavor contrast even more; it’s a great alternative if you’re getting a little sick of sweet potatoes and need something new to make them interesting again.
This one is an easy recipe to work around any schedule because the marinating time is so flexible. 2 hours is enough if you need your chicken in a hurry, but you can leave it as long as 12 if you’ll be away at work or just want to throw it in after breakfast and forget about it until dinner is ready to cook.
This would also be a great recipe to batch cook for meals throughout the week: chicken breast and roasted sweet potatoes are both good hot or cold, and the starch is built right into the recipe, so it’s a complete bowl (or Tupperware) of delicious post-workout nutrition.
Chicken With Garlic-Roasted Sweet Potatoes Recipe

Ingredients
- 4 boneless skinless chicken breasts
- ¼ cup olive oil
- ¼ cup. Dijon or whole-grain mustard
- ¼ cup raw honey (optional)
- Juice of half a lemon
- 2 garlic cloves, minced
- ½ tbsp. paprika
- ¼ tsp. cayenne pepper
- ¼ tsp. red pepper flakes
- Sea salt and freshly ground black pepper
Ingredients for the garlic-roasted sweet potatoes
- 2 cups sweet potatoes, peeled and cubed
- 2 garlic cloves, minced;
- 1 tbsp. olive oil
- Sea salt and freshly ground black pepper
Preparation
- Whisk all the ingredients for the chicken marinade in a glass bowl.
- Add the chicken breasts to the bowl. Cover and marinate in the refrigerator for 2 to 12 hours.
- Preheat your oven to 425 F.
- In a bowl, combine all the ingredients for the sweet potatoes and toss until everything is well combined.
- Place the chicken breasts in a baking dish, and add the sweet potatoes all around them.
- Bake in the oven for 30 to 40 minutes or until the chicken is no longer pink and the sweet potatoes are soft.
