Classic, comforting, and always a crowd-pleaser, egg salad has been a staple at picnics, lunches, and light dinners for decades. While some may associate it with white-bread simplicity, egg salad is far from a one-note dish.

    Classic Egg Salad

Ideal for the foodie looking for nostalgia and innovation, for the health-conscious seeking a nutritious and satisfying meal, and for the host or hostess who wants to please a crowd with minimal fuss. The paleo enthusiast will find this classic egg salad a delicious and versatile part of their culinary repertoire, offering a gentle compromise between tradition and dietary path.

It’s adaptable, a palette for personalization, and a nutritious addition to any meal. Served with a slice of Bread, its fine, but turn them into Egg Salad Sliders and you're talking something perfect for a picnic. Or, alternatively, stuff your classic egg salad into an avocado for an elevated meal.

    Ingredients

Serves: 3 Prep Time: 15 minutes Cook Time: 7 minutes

    • 6 large eggs
    • 3 tablespoon mayonnaise
    • 2 celery stalks, chopped
    • ½ bunch chives, chopped
    • A squeeze of lemon juice
    • Sea salt and freshly ground black pepper to taste

How to Make Classic Egg Salad

For perfect hard boiled eggs, place the eggs in a pot with cold water and gently bring to a boil. When the water boils, cover the pot, turn off the heat and let stand for exactly 7 minutes. After 7 minutes, drain the hot water and rinse with icy cold water for a minute to stop the cooking and prevent a grey ring from forming around the yolk.

Peel the eggs and place them in a bowl with the mayonnaise and mash together with a fork.

Season with salt and pepper and add the celery, chives and the lemon juice. Adjust the seasoning if necessary.
