    Fresh Fruit Popsicles Recipe

    Is the ice cream truck calling your name lately? Throw together a batch of Paleo popsicles instead, with coconut water, real fresh fruit, and no monkey business going on with the flavors.

    They won’t quite turn your lips that charming shade of atomic purple-blue, but that’s a pretty small price for a treat that’s much healthier and so easy to make.

    Fresh Fruit Popsicles

    Because coconut water is so full of electrolytes, these would even make perfectly fine “recovery popsicles” after a hard outdoor workout; just add a very tiny pinch of salt to the coconut water before pouring it into the molds. (It shouldn’t be enough to taste; you just need enough sodium to replace what you’ve lost from sweating).

    The number of popsicles will change depending on the size of your mold; you can make bite-sized treats for a crowd or bigger, snack-sized popsicles (or even both).

    I’ve suggested some fruits below, but you can really use any combination you like for this recipe. Try pineapple if you really want to turn up the “tropical” theme, or oranges if you like it a little tangier – or just hunt through the fridge for anything that’s about to go bad.

    If you throw together a batch in the morning, they’ll be ready in time for an after-lunch snack, or just leave them in the freezer and wait until you want one on a hot afternoon later. That’s planning ahead in its most delicious form!

    Ingredients

    • 2 kiwis, peeled and sliced;
    • 1 package of fresh strawberries, sliced;
    • 1 package fresh raspberries;
    • 1 package of fresh blueberries;
    • Coconut water;
    • Popsicle molds;

    Preparation

    1. Fill each Popsicle mold with fresh fruit, but don't jam it in too tight; you want some space in between to fill up with coconut water.
    2. Fill each mold with coconut water.
    3. Freeze the molds for at least 5 hours or until solid.
