    Simple Roast Beef Recipe

    Roast beef is a deli-counter staple, a classic Sunday dinner, and an all-around basic recipe that every cook should know. It’s an easy way to use the more economical cuts of beef, almost everyone likes it, and it’s good all year round – in cold weather, serve it hot, and in the heat of the summer, it’s just as good cold.

    This recipe doesn’t complicate a classic with any special frills; if you’re looking for a recipe where you add the last unexpected gourmet twist by stirring half a Goji berry and three leaves of mint into the sauce for precisely 45 seconds and then straining the whole affair through a gold-plated cheesecloth, you’re in the wrong place. But if all you want is some delicious meat, then this is just the recipe for you.

    If you prefer roast beef cold, you might be groping for options that don’t come between two slices of sourdough.

    There’s always a lettuce wrap for a direct substitution, or try deconstructing your favorite roast beef sandwich into salad form! Crunchy lettuce, pickles, your favorite mustard in the dressing – have fun coming up with a sandwich alternative that doesn’t need any bread at all!

    Simple Roast Beef Recipe

    SERVES: 4 PREP: 10 min + 4 h COOK: 90 min

    Ingredients

    • 2 ½ lb. boneless beef top loin roast;
    • 3 garlic cloves, grated;
    • 2 tbsp. rosemary leaves, minced;
    • 3 tbsp. olive oil;
    • Sea salt and freshly ground black pepper;

    Preparation

    1. In a bowl, combine the garlic, and rosemary and season with salt and pepper to taste.
    2. Rub the garlic mixture all over the beef. Cover and marinate in the refrigerator for 4 hours or overnight.
    3. Remove the meat from the refrigerator 30 minutes before you're ready to cook it.
    4. Preheat your oven to 325 F.
    5. Place the meat on a wire rack, drizzle olive oil on top, and place in the oven.
    6. Roast in the oven for 1 hour to 1h 30 min.
    7. When ready, let the meat rest for a few minutes before carving.
