    Curried Purple Sweet Potatoes Recipe

    No matter the time of year, there’s nothing quite like a seasoned, baked sweet potato recipe. If you are looking for the perfect side for a large family gathering or just searching for a fun way to use them in your cooking, this curried style version works perfectly.

    Curried Purple Sweet Potatoes

    We really like the use of Indian-themed spices in a way unlike a traditional baked sweet potato – while most people might feel as though these need extra sweeteners (even honey) to taste just right, this version shows off the versatility of this vegetable.

    Although we think the pay-off for this dish is worth the wait, note that sweet potatoes do take quite a bit of time to cook. You can reduce the cooking time a bit by dicing these bite-sized, making it easier for them to cook through.

    You may have noticed that we use sweet potatoes quite a bit in our recipes. Even though there’s nothing wrong with white potatoes, sweet potatoes have a ton of additional nutritional value and, we think, more flavor than the white variety.

    The decision whether or not to omit white potatoes from your diet is yours alone, but know that using sweet potatoes in lieu of white works for pretty much any dish (even heartier options).

    For this dish, consider ramping up your meal by serving this alongside a whole baked chicken or spending a bit more on a pricier cut of steak. For either option, try keeping the seasoning on the simpler side so that the curry sweet potatoes get a chance to stand out.

    Curried Purple Sweet Potatoes Recipe

    Ingredients

    • 1 lb. purple sweet potatoes, peeled and diced
    • 1 tbsp. fresh ginger, minced
    • 2 garlic cloves, minced
    • 2 tsp. ground cumin
    • ½ tsp. ground turmeric
    • ¼ tsp. ground cinnamon
    • 1 tsp. ground coriander
    • 2 tbsp. coconut oil
    • Sea salt and freshly ground black pepper
    • Chopped pecans

    Preparation

    1. Place the diced sweet potatoes in a water-filled saucepan and bring to a light boil.
    2. Simmer them for about 6 to 8 minutes, then transfer them to cold water.
    3. Heat coconut oil in a skillet.
    4. Add the ginger and garlic and cook over medium-low heat for 2 to 3 minutes.
    5. Add the sweet potatoes and sprinkle with all of the spices.
    6. Toss everything and cook another 4 to 5 minutes, until the sweet potatoes are fork tender.
    7. Adjust seasoning to taste and serve topped with chopped pecans.
