    Almond Banana Pancakes

    Gone are the days when breakfast was a hurried, often overlooked part of the day. In our health-conscious world, more people are dedicating time and effort to choose options that are both nutritious and delectable. Almond banana pancakes embody this shift towards wellness and satisfaction, serving as a perfect example of a meal that fuels your body and tantalizes your taste buds.

    For a balanced meal, pair your pancakes with protein-rich options such as Scrambled Eggs with Smoked Salmon. These savory sides will contrast nicely with the natural sweetness of the pancakes.

    Ingredients

    Serves: 2 Prep Time: 7 minutes Cook Time: 5 minutes

    • 4 ripe bananas, mashed
    • 2 eggs
    • 4 tablespoon almond butter
    • Butter, ghee or coconut oil for cooking

    How to Make Almond Banana Pancakes

    Combine the mashed bananas in a bowl with the eggs and mix well. Add the almond butter and combine well.

    Put a pan over a medium heat and melt in some butter or coconut oil. When hot, pour in a ladleful of the banana and almond butter mixture and cook until brown on each side. Repeat for all the batter, reserving the prepared pancakes in a 200 F oven so they stay hot.
