    Baked Salmon with Asparagus and Roasted Beets

    Incorporating salmon into your diet is a popular choice for many reasons. It’s a powerhouse of protein, B vitamins, and omega-3 fatty acids, which are essential for cardiovascular health. Pairing this with nutrient-dense asparagus and the earthy goodness of roasted beets makes for a meal that’s as wholesome as it is delectable.

    But before we jump into the kitchen, imagine the sizzle of the salmon in the oven and the rich colors that will adorn your dinner table. Picture the steam wafting from the fresh asparagus and the beets, their sweetness enhanced by a gentle roast. This isn't just about taste and health; it's an exercise in the culinary arts.

    It's so perfect, it would make a creative main course for a dinner party, served with lemonade and maybe a raspberry spinach salad.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 10 minutes

    • 4 wild salmon fillets
    • 4 tablespoon cooking fat
    • 4 teaspoon chopped dill
    • 16 fresh asparagus sprigs, white part removed
    • 4 medium beets, cut in cubes
    • Sea salt and freshly ground black pepper to taste

    How to Make Baked Salmon with Asparagus and Roasted Beets

    Preheat your oven to 500 F.

    Line four large pieces of foil and place a salmon fillet on a bed of beet cubes and 4 asparagus. Do that for the 4 fillets.

    Add 1 tablespoon cooking fat and 1 teaspoon dill on top of each fillet and close the foil to form a little pocket.

    Bake in the hot oven for about 10 minutes for every inch of thickness of the fish.

    Make sure to check on the fish so it doesn’t overcook.

    Serve topped with some more of your favorite fresh herbs. More dill is perfect, but cilantro is also really good.
