Ingredients
- 2 X 3 oz. beef tenderloin steaks
- 4 to 6 garlic cloves, peeled
- Fresh rosemary sprig
- Cooking fat
- Sea salt and freshly ground black pepper
Ingredients for the shrimp
- 10 to 12 shrimp, peeled and deveined
- 3 tbsp. fresh lime juice
- 2 garlic cloves, minced
- 2 tbsp. fresh cilantro, minced
- 1 tbsp. olive oil
- Sea salt and freshly ground black pepper
Preparation
- In a bowl, combine the lime juice, garlic, olive oil, cilantro, and season with salt and pepper to taste.
- Pour the marinade over the shrimp in a marinating container (glass or plastic; no metal) and refrigerate for 1 to 2 hours.
- Bring the steak to near room temperature and season to taste.
- Preheat a skillet over medium-high heat.
- Melt some cooking fat in the skillet; add some fresh rosemary sprigs and garlic cloves.
- Cook the steak for 3 to 4 minutes per side for medium rare, basting with the melted fat from the bottom of the pan.
- Remove the steaks and let them rest for about 5 minutes.
- Cook the shrimp in the same skillet for 2 to 3 minutes per side.
- Serve the steaks with shrimp and a nice salad.
