    Brazilian Roasted Chicken And Vegetables Recipe

    Paleo Brazilian recipes are few and far between, though according to taste tests of what is available, there should definitely be more!

    A quick search brings up Brazilian curry, a low-carb shrimp stew, and a bowlful of Brazilian-style fish stew. Today, however, we are leaving the fish in the sea and baking up some Brazilian roasted chicken with sweet potatoes, bell peppers, and tomatoes instead.

    Vegetables are just vegetables without spices, so make sure your spice rack is full!

    Can't find Brazilian seasoning at the store? We've got you covered.

    Here is how to make your own Brazilian seasoning at home: In a small bowl, mix together 1 teaspoon ground cumin, 1 teaspoon dried parsley, 1 teaspoon white pepper, 1 teaspoon turmeric, ½ teaspoon ground coriander and ½ teaspoon red pepper flakes.

    Stir together and mix well. Go ahead and double or triple, or quadruple the recipe, and save it in a spare glass jar. Sprinkle it on grilled steak, baked chicken, hamburgers and sweet potato fries to experience amazing dinners.

    This recipe involves several ingredients and more than an hour from start to finish, yet you will not be disappointed!

    If you find that you have even more time on hand, why not try marinating the chicken in lemon and spices first? 3 hours in the fridge should be sufficient. In the meantime, treat yourself to ginger-turmeric orange juice to rejuvenate and restore your senses.

    Brazilian Roasted Chicken And Vegetables Recipe

    Ingredients

    • 8 to 10 chicken thighs, bone-in, and skin-on
    • Zest and juice of 1 lemon
    • 3 tbsp. extra virgin olive oil
    • 1 tbsp. Brazilian seasoning
    • 1 tbsp. onion powder
    • 1 tbsp. fresh oregano, crushed
    • ½ tbsp. paprika
    • Sea salt and freshly ground black pepper

    Brazilian Vegetables

    • 2 sweet potatoes, diced
    • 1 onion, diced
    • 2 bell peppers, sliced
    • 2 tomatoes, diced
    • 4 garlic cloves, minced
    • 2 tsp. dried thyme
    • 2 tsp. dried parsley
    • 2 teaspoon smoked paprika
    • Sea salt and freshly ground black pepper

    Preparation

    1. Preheat oven to 400 F.
    2. In a bowl, combine the Brazilian seasoning, lemon juice, lemon zest, onion powder, oregano, paprika, and olive oil, then season to taste.
    3. Brush the chicken thighs with the Brazilian seasoning mixture, making sure everything is well coated.
    4. In a bowl, combine all the ingredients for the vegetables, and season to taste.
    5. Place the chicken in a baking dish and surround the chicken with the vegetable mixture.
    6. Pour any remaining sauce over the chicken and vegetables.
    7. Bake in the preheated oven for 35 to 45 minutes.
    8. Serve the chicken with baked vegetables.
