    Chicken And Vegetables Grilled in Foil Packet

    Cooking dinner on the grill and then not having to clean up the grill afterward!

    In this recipe, the foil packets make everything super convenient. Just wrap up the chicken and vegetables together and throw them on the grill.

    You can make more or fewer packets just by adjusting the ingredients. And if you want leftovers, it’s hard to get easier than this. You can literally just open the foil, dump everything into a storage container, and your lunch for tomorrow is packed!

    Of course, the vegetables are also negotiable. If you can’t stand asparagus, just swap it out for cauliflower or something else. Or if you just want more vegetables, throw in some extras. Think of this as more of a concept than a recipe, and see what you feel like doing with it.

    Chicken And Vegetables Grilled in Foil Packet Recipe

    SERVES: 4 PREP: 25 min COOK: 30 min

    Ingredients

    • 4 chicken breasts, boneless and skinless;
    • 1 zucchini, sliced;
    • 1 bell pepper, sliced;
    • 1 bunch of asparagus, trimmed;
    • 2 cups broccoli florets,
    • 4 tbsp. olive oil;
    • ½ cup homemade BBQ sauce;
    • Sea salt and freshly ground black pepper;
    • Aluminum foil;
    Chicken And Vegetables Grilled in Foil Packet Recipe Preparation

    Preparation

    1. Preheat a grill to medium-high heat.
    2. Brush each chicken breast with BBQ sauce, and place each chicken breast on a large piece of foil.
    3. Divide the vegetables equally among the foil packets.
    4. Drizzle the chicken and vegetables with olive oil and season to taste.
    5. Properly fold the foil, making sure everything is well sealed.
    6. Place on the grill for 30 minutes, turning once at the halfway point.
    7. Let rest for a few minutes before serving.
