Grain-Free Oatmeal
Unlike traditional oatmeal that relies on oats as its primary ingredient, grain-free oatmeal utilizes innovative substitutes like nuts, seeds, and banana to mimic the texture and taste of oat-based varieties. Ingredients
Serves: 2 Prep Time: 10 minutes Cook Time: 5 minutes
- 1 handful pecans
- 1 handful walnuts
- 2 tablespoon ground flax seeds
- 1 teaspoon ground cinnamon
- 1 pinch nutmeg
- 1 pinch ground ginger
- 1 tablespoon almond or macadamia butter
- 1 banana, mashed
- 3 eggs
- ¼ cup coconut milk
- 1 handful of your favorite berries
- Extra cinnamon to garnish
How to Make Grain-Free Oatmeal
Place the walnuts, pecans, flax seeds and spices in a food processor and process until still coarse.
In a bowl, combine the eggs and coconut milk with a whisk until it thickens a bit. Add the mashed banana and nut butter to the egg mixture and combine well.
Pour the nut mixture in the egg mixture and combine again.
Pour in a saucepan over a low heat to heat the mixture. Stir often and remove from heat as soon as it’s warm.
Serve in a bowl, topped with the berries and extra cinnamon to garnish. Extra cold coconut milk on top is also excellent to contrast with the hot nut mixture.
