Pork chops marinated in crushed herbs, olive oil, and tangy lime juice are a bright and fresh addition to the dinner table, especially when you can use them to get your grilling game back on after the winter.
The marinade time is almost completely up to you; you can leave them overnight to get the absolute maximum flavor, but that’s not necessary, and they’ll still be good in as little as 30 minutes.
Adding a side of grilled Belgian endives also gives you a little bit of variety in the typical grilling rotation. If you’ve never had endives before, then buying them can be a little bit confusing because you’ll see two things labeled “endive” at the grocery store:
- A frizzy leafy green vegetable that looks like a head of lettuce on a really bad hair day. (Endive)
- A compact vegetable with leaves fading from white to yellow-green, with the shape of an elongated egg. (Belgian Endive)
The second is the one you want. Belgian endives make a sophisticated side dish thanks to their slightly bitter or tangy taste (the darker the color, the stronger the taste).
And if the taste is a little strong for you, you could always grill up some other vegetables to go along with the endives and tone it down a little. But give the endives a try: they’re pretty cheap, and they’re a fun way to experiment with something that doesn’t normally make its way onto the grill!
Herbed Pork Chops Recipe

Ingredients
- 4 bone-in pork chops
- 2 tbsp. parsley, chopped
- 2 tbsp. fresh basil, chopped
- 1 tsp. fresh thyme, chopped
- 2 garlic cloves, finely chopped
- 1 tbsp. olive oil
- The juice of 1 lime
- Sea salt and freshly ground black pepper
Ingredients for the grilled endives
- 4 to 5 Belgian endives, sliced in half
- 2 tbsp. olive oil
- 1 tsp. garlic powder
- 2 teaspoons fresh thyme, minced
- Sea salt and freshly ground black pepper
Preparation
- In a mortar and pestle, crush the herbs and garlic until you get a good paste.
- Pour in the olive oil and lime juice. Season to taste, and stir until well blended.
- Rub the herb mixture on the pork chops and marinade for at least 30 minutes and up to 12 hours.
- Preheat your grill to medium-high heat.
- Drizzle some olive oil over the endives.
- Sprinkle the garlic powder, salt, pepper, and thyme over the endives.
- Cook the pork chops for 4 to 5 minutes per side until just cooked through; let rest for 2 to 3 minutes.
- While the chops are resting, grill the endives for 2 to 3 minutes.
- Serve the pork chops with the endives.
