- 2 tbsp. cooking oil
- 1 onion, chopped
- 2 large stalks of celery, finely chopped
- 2 garlic cloves, crushed
- 2 cups cauliflower, chopped
- 1 lb. sausage meat, out of the casing
- 1 egg
- 5-8 sprigs of fresh thyme
- ¾ cup pecans, chopped
- 2 tsp. salt
- 1 tsp. pepper
Preparation
- Preheat the oven to 350 F.
- In a large pan, cook the onion and celery in oil until soft and fragrant.
- Add the cauliflower and cook for 5 minutes before adding the garlic. Cook for another minute; then season to taste and remove from the heat. Allow cooling.
- In a large bowl, mix the sausage meat and pecans with the cauliflower mixture, egg, salt, and pepper.
- Transfer to an oven-proof dish and top with fresh thyme.
- Place in the oven and allow to bake for 25-30 minutes.
- Remove from the oven and serve.
