    Lamb Liver with Oranges

    More often than not, liver is relegated to the backbenches of cuisines, yet it reigns as a nutritional powerhouse. Lamb liver is remarkably rich in high-quality protein—vital for muscle repair and growth. It’s also a champion source of iron, which is essential for oxygen transport and preventing anemia. Combine that with a hefty dose of vitamin A, necessary for immune function, vision, and skin health, and you have a superfood that’s been sorely overlooked.

    Serve with a side of Creamy Mashed Cauliflower to balance the robustness of the liver. On another plate, Balsamic Roasted Carrots and Green Beans adds a delightful contrast in texture and sustenance.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 30 minutes

    • 1 onion, chopped
    • 1 clove garlic, minced
    • 1 lb lamb’s liver, thinly sliced
    • 1 ½ cups chicken stock
    • 2 oranges, peeled and thinly sliced crosswise
    • 2 tablespoon fresh chives, snipped, for garnishing
    • Cooking fat
    • Sea salt and freshly ground black pepper

    How to Make Lamb Liver with Oranges

    Heat a large frying pan over a medium heat and cook the onion and garlic in cooking fat until the onion starts to brown, about 7 minutes.

    Season the liver slices to taste with salt and pepper and add them to the frying pan. Fry on both sides until just browned.

    Pour in the chicken stock, bring to a boil and reduce to a simmer to then simmer for 10 to 15 minutes.

    Stir in the orange slices, adjust the seasoning if needed and serve, garnished with the snipped chives.
