    For those with a penchant for the ocean's bounty, Mediterranean scallops are more than a choice ingredient—they're the star attraction on the plates of gourmands and home cooks alike. This delectable mollusk, a staple of coastal Mediterranean cuisine, is renowned for its delicate, sweet flavor and the elegant simplicity it lends to any dish. But beyond their gastronomical appeal, these scallops reveal a story of sustainable seafood practices and the unique aspects of the Mediterranean Sea that nurture them.

    Mediterranean Scallops

    For the paleo aficionado, Mediterranean scallops are a natural choice. Their lean, protein-rich meat pairs beautifully with fresh, natural ingredients, making them a versatile canvas for a range of paleo-compliant dishes.

    Try them with a Citrus and Avocado Salad for a refreshing twist or serve on a bed of Sautéed Spinach and Caramelized Onions for a quick, satisfying meal.

    Ingredients

    Serves: 4 Prep Time: 5 minutes Cook Time: 11 minutes

    • 1 lb scallops
    • ½ cup onion, finely sliced
    • 1 clove garlic, minced
    • 1 cup tomatoes, diced
    • ¼ cup black olives, pitted and chopped
    • 1 tablespoon dried basil
    • ¼ teaspoon dried thyme
    • Cooking fat
    • Sea salt and freshly ground black pepper to taste

    How to Make Mediterranean Scallops

    Heat a large skillet over a medium heat and cook the scallops in some cooking fat until just cooked through and opaque all the way through, about 3 minutes per side.

    Set the scallops aside on a plate, add the onion and garlic to the pan and cook until the onions are soft, about 3 minutes.

    Stir in the tomatoes, olives, dried basil and dried thyme. Combine well, season to taste with sea salt and freshly ground black pepper and cook for another 2 minutes.

    Serve the scallops with the tomato sauce poured over them.
