When you’re searching for a main course recipe that’s quick and inexpensive, there really isn’t much that can top a homemade burger. These dishes require one of the least expensive cuts of meat and are super easy (albeit a bit messy) to make.
Burgers might not seem like a great choice to some – as the anchor meal of nearly all fast-food chains, the typical burger is over-processed, filled with non-Paleo ingredients, and treated as a commodity versus what it really needs to be – food that nourishes your body.
So, with this recipe, we’re going to take the burger back – by using ground poultry instead of beef and filling the patties with Mediterranean-inspired ingredients, we end up with a fast and delicious dinner made right at home.
If you've ever worked with ground chicken or turkey before, you may know how tricky it can be to shape. In this recipe, you’ll be using an almond meal to help bind the ingredients together, ultimately making it easier to form the patty.
This ingredient adds some additional micronutrients to your meal, but use it sparingly – if you have digestive sensitivity, this ingredient can cause irritation. Almond meal is available at most specialty grocery stores in the baking section – you can also grab them online if needed.
When you are done prepping this main course, get creative with how you serve these patties! While you could always serve them wrapped in lettuce for a burger-style meal, we like the idea of making a batch of cauliflower tortillas or using a pre-made Paleo wrap to serve this pita-style. Add your choice of salad to round out your plate!
Mediterranean-Style Chicken Burgers Recipe

Ingredients
- 1 ½ to 2 lb. ground chicken or turkey
- ¼ cup red onion, minced
- ¼ cup sun-dried tomatoes, minced
- 2 oz. fresh spinach, minced
- 1 tsp. dried oregano
- 1 garlic clove, minced
- ½ cup almond meal
- 1 egg
- Sea salt and freshly ground black pepper
Ingredients for Dill and Garlic Mayonnaise;
- ½ cup homemade mayonnaise;
- 2 tsp. fresh dill, minced
- 1 tbsp. Dijon mustard
- 1 garlic clove, minced
- 2 tbsp. fresh lemon juice
- ¼ cup onion, minced
- Sea salt and freshly ground black pepper
Preparation
- Combine all ingredients for the mayonnaise in a bowl and stir until well blended.
- Place the sauce in the refrigerator until ready to serve.
- In a bowl, combine the ground chicken, onion, sun-dried tomatoes, spinach, garlic, oregano, almond meal, and egg; season with salt and pepper to taste.
- Form the chicken mixture into evenly sized-patties.
- Melt cooking fat in a skillet over high heat and add the patties to the skillet.
- Cook the patties for 5 to 6 minutes per side or until they are no longer pink.
- Serve the patties topped with the mayonnaise and your favorite toppings.
