    Pork and Lamb Kidney Hot Pot

    Hot pots historically provided nourishment during the harsh winters, and food was often shared around the simmering pot, fostering a sense of community and togetherness. Today, this tradition continues, with hot pot meals often becoming a focal point for social gatherings.

    To complement the succulent flavors of pork and lamb kidney in your hot pot, consider offering a pairing of a selection of mushrooms, such as shiitake, enoki, or oyster mushrooms, contributes an umami depth that matches well with the robust taste of the organ meats. Their unique textures—ranging from tender to chewy—add an intriguing variety to each bite. To cleanse the palate between bites, serve refreshing sides such as dill-garlic pickles, a creamy cucumber salad, or kimchi. These not only add a tangy contrast but aid in digestion as well.

    Ingredients

    Serves: 6 Prep Time: 15 minutes Cook Time: 35 minutes

    • 4 lamb kidneys, white core removed  and cut into 1-inch cubes
    • ½ lb pork tenderloin, cut into 1-inch cubes
    • 1 onion, roughly chopped
    • 1 can (14 oz.) tomatoes
    • ½ teaspoon dried oregano
    • Cooking fat
    • Sea salt and freshly ground black pepper to taste

    How to Make Pork and Lamb Kidney Hot Pot

    Heat a skillet equipped with a lid over a medium heat and cook the onion in some cooking fat until soft, about 5 minutes.

    Stir in the pork tenderloin cubes and continue cooking for about 8 minutes, until browned.

    Now add the kidney pieces and cook for a further 5 minutes while stirring frequently.

    Add the tomatoes and oregano, season to taste with sea salt and freshly ground black pepper and bring to a boil.

    Reduce to a simmer, cover, and cook for 10 minutes.

    Uncover and cook for another 5 minutes.

    Adjust the seasoning if needed and serve.
