    Pork Chops With Apple-Bacon Relish Recipe

    These quickly grilled pork chops get a big boost of flavor from a big pile of sweet-savory relish, and with apple season about to start, there’s no better time to start experimenting with all the ways you can make them delicious.

    Pork Chops With Apple-Bacon Relish

    Cooking them here with red onions, bacon crumbles, and fresh thyme gives you a savory, slightly rustic topping that might taste even better than the pork chops underneath.

    For the apples, use whatever kind you can get fresh off the tree: all kinds of different varieties could work well here, depending on what effect you’re going for.

    This is a good recipe for early Fall because you can make it either a lighter meal if it’s still warm or a heavier, more comforting meal if you’ve already got the heater running.

    For a more summery effect, go with a salad and some roasted zucchini or yellow squash; for more of a winter comfort food, try roasted cauliflower or acorn squash, or maybe a baked sweet potato. Try it both ways and see how you like it best!

    Pork Chops With Apple-Bacon Relish Recipe

    Ingredients

    • 4 to 6 big pork chops;
    • Sea salt and freshly ground black pepper;

    Ingredients for the apple-bacon relish

    • 8 bacon slices;
    • 4 apples, chopped;
    • 1 cup red onions, sliced;
    • 1 tbsp. garlic, minced;
    • 2 tablespoons apple cider vinegar;
    • 1⁄2 tbsp. fresh thyme;
    • 2 tbsp. raw honey;
    • 1 tsp. ground cinnamon;
    • Sea salt and freshly ground black pepper;

    Preparation

    1. Preheat your grill to medium-high.
    2. Sauté the bacon in a skillet until crisp. Remove and crumble when cool enough to handle.
    3. Add the onion and garlic to the skillet and cook over medium-high heat until soft and golden.
    4. Add the apples, and cook for 4 to 5 minutes.
    5. Add the honey and vinegar and reduce the heat.
    6. Sprinkle with the ground cinnamon and fresh thyme, and season with salt and pepper to taste.
    7. Cook the pork chops on the grill for 5 to 7 minutes per side.
    8. Serve the pork chops with the apple-bacon relish.
