- 4 to 6 big pork chops;
- Sea salt and freshly ground black pepper;

- 8 bacon slices;
- 4 apples, chopped;
- 1 cup red onions, sliced;
- 1 tbsp. garlic, minced;
- 2 tablespoons apple cider vinegar;
- 1⁄2 tbsp. fresh thyme;
- 2 tbsp. raw honey;
- 1 tsp. ground cinnamon;
- Sea salt and freshly ground black pepper;
Preparation
- Preheat your grill to medium-high.
- Sauté the bacon in a skillet until crisp. Remove and crumble when cool enough to handle.
- Add the onion and garlic to the skillet and cook over medium-high heat until soft and golden.
- Add the apples, and cook for 4 to 5 minutes.
- Add the honey and vinegar and reduce the heat.
- Sprinkle with the ground cinnamon and fresh thyme, and season with salt and pepper to taste.
- Cook the pork chops on the grill for 5 to 7 minutes per side.
- Serve the pork chops with the apple-bacon relish.
