    Putanesca Sauce

    This tantalizing combination of ingredients, with its pungently aromatic profile, has the ability to transform a simple bowl of pasta into a gourmet masterpiece. The heart of any Puttanesca recipe is its medley of characteristic ingredients. However, the approach to crafting this sauce can vary greatly; some purists argue the slow, methodical melding of the classic elements is essential, while others champion quick and convenient adaptations. This recipe bridges the gap to make a Putanesca that serves all the needs.

    Puttanesca sauce is incredibly versatile and can be paired with a wide range of pasta types, each offering a unique texture and mouthfeel. Any kind of Zoodle you make will join with the sauce perfectly. But, the sauce is also a bold companion to various proteins and vegetables. The flavors of the sauce play well against the mildness of Grilled Chicken or fish, delivering a harmonious dish. For a more decadent pairing, try clams or Mussels for a briny seafood twist.

    Ingredients

    Serves: 4 Prep Time: 7 minutes Cook Time: 40 minutes

    • â…“ cup cooking fat
    • 10 anchovies
    • 8 whole garlic cloves, peeled
    • ¼ teaspoon red pepper flakes
    • 4 medium tomatoes, chopped and seeded or 1 can diced tomatoes
    • 16 Kalamata olives, pitted and halved
    • 2 teaspoon capers
    • 5 garlic cloves, minced
    • â…“ cup chopped fresh parsley
    • 1 tablespoon chopped basil
    • Freshly ground black pepper

    How to Make Putanesca Sauce

    Heat the cooking fat in a dutch oven and add the anchovies and whole garlic cloves. Cook until the garlic cloves start to brown.

    Add the red pepper flakes and cook for another few seconds.

    Add the tomatoes, olives and capers, season to taste with freshly ground black pepper, bring to a simmer and let the sauce simmer for 30 minutes.

    Add the minced garlic, parsley and basil and simmer for another 5 minutes.
