Scallops with Ginger and Pineapple Salsa

Scallops are a culinary treasure that offers a buttery, melt-in-your-mouth experience with every bite. Whether served as an appetizer, a main course, or integrated into a delicious pasta, scallops are incredibly adaptable to various flavor profiles and cooking techniques. They are low in fat, high in protein, and a rich source of important minerals like magnesium and potassium.

For those on a paleo diet, scallops are a fantastic option. They are free of grains and legumes and low in carbohydrates, making them a perfect addition to any meal plan that prioritizes clean, unprocessed foods.

Combining the health benefits of scallops with the wholesome goodness of pineapple, which is brimming with vitamins and anti-inflammatory benefits, and the digestive superpower of fresh ginger, this recipe is not just a treat for the taste buds but also wellness on a plate.

Want to take it to that next level and turn this paleo treasure into a full-on meal? Try pairing these scallops with a heaping helping of Cauliflower Mushroom Risotto or Grilled Sweet Potatoes. Absolutely amazing.
