- 4 large scallops
- 1 onion, sliced
- ¼ cup fresh pineapple, chopped
- 1 tablespoon fresh ginger, grated
- 1 teaspoon fresh cilantro, finely chopped
- 1 teaspoon honey, optional
- 1 teaspoon lemon juice
- ½ teaspoon sesame seeds
- â…› teaspoon red pepper flakes
- 4 teaspoon extra-virgin olive oil
- Cooking fat
- Sea salt and freshly ground black pepper to taste
How to Make Scallops with Ginger and Pineapple Salsa
Heat a frying pan over a medium heat and cook the onion in some cooking fat until softened, about 5 minutes.
Place the cooked onion in a bowl with the pineapple, ginger, cilantro, honey, if using, lemon juice, sesame seeds, red pepper flakes and olive oil. Season to taste with sea salt and black pepper and mix everything well.
Heat the frying pan again to a medium-high heat, season the scallops to taste, and cook them in the hot frying pan with some cooking fat for about 2 minutes per side, until just cooked and opaque all the way through.
