    Looking for a dish that's both easy to make and deliciously flavorful? Look no further than the Chicken And Mushroom Slow Cooker Stew. Perfect for busy weeknights, this stew packs a punch with tender chunks of chicken, earthy mushrooms, sweet butternut squash, and tangy diced tomatoes.

    Chicken And Mushroom Slow Cooker Stew

    Everyone loves a good slow cooker recipe. This chicken and mushroom slow cooker stew is filled with protein, fiber, and delicious flavor. You'll love how easy this is to throw together, and how satisfying it is to eat at the end of a long day at work.

    Serve this stew with a piece of toasted paleo or keto bread on the side for dipping.

    Ingredients

    Serves: 4 Prep Time: 15 min Cook Time: 6-7 hrs

    • 1 onion, sliced
    • 1 ½ cups mushrooms, sliced
    • 1 lb boneless chicken breast, cut into 1-inch pieces
    • 1 can (14 oz.) diced tomatoes
    • 3 cups peeled butternut squash, cut into 1-inch cubes
    • 4 cloves garlic, minced
    • 2 bay leaves
    • Cooking fat
    • Sea salt and freshly ground black pepper

    How to Make Chicken And Mushroom Slow Cooker Stew

    For this recipe, you will want to brown the onions and chicken before adding to the slow cooker. You can put everything in and let it cook from a raw state, but I like the flavor that comes from browning first.

    Heat a large skillet over medium heat. Add some cooking fat to the skillet Once melted, add the chicken pieces, sliced onions, and sliced mushrooms to the skillet. Stir occasionally and cook for about 8 minutes or until the chicken is slightly browned and the onions are translucent.

    Transfer the chicken and vegetable mixture to your crock pot. Add the diced tomatoes, butternut squash cubes, minced garlic, and bay leaves to the crock pot. Season to taste with salt and black pepper.

    Stir to combine, then cook on low for 6 to 7 hours. Once done, taste, and season more if needed.

    Note: While the vegetables and chicken will add some liquid naturally, you may want to add a bit of bone broth to add moisture and more of a soup style to the dish.

    Ingredients
      

    • 1 onion sliced
    • 1 ½ cups mushrooms sliced
    • 1 lb boneless chicken breast cut into 1-inch pieces
    • 1 can 14 oz. diced tomatoes
    • 3 cups peeled butternut squash cut into 1-inch cubes
    • 4 cloves garlic minced
    • 2 bay leaves
    • 2 tablespoon cooking fat
    • Sea salt and freshly ground black pepper

    Instructions
     

    • In a skillet, brown chicken pieces with sliced onions and sliced mushrooms. Cook for about 8 minutes, or until the chicken is golden brown and the onions are translucent.
      1 onion, 1 ½ cups mushrooms, 1 lb boneless chicken breast, 2 tablespoon cooking fat
    • Transfer the chicken and vegetables to a slow cooker. Add diced tomatoes, butternut squash cubes, minced garlic, salt, pepper, and bay leaves.
      1 can, 3 cups peeled butternut squash, 4 cloves garlic, 2 bay leaves
    • Stir ingredients together. Cook on Low heat for 6 to 7 hours.
    • Taste and adjust seasoning as needed by adding more salt and/or pepper.
      Sea salt and freshly ground black pepper

    Notes

    • This can be cooked for up to 8 hours on low.  
    • Add additional seasonings or vegetables if desired. 
    • This is good for up to 4 days in the refrigerator.
