- 4 trout fillets, skin removed
- 2 mangos, sliced
- 2 tomatoes, sliced
- 1 onion, sliced
- Fresh cilantro
- 2 tbsp. olive oil
- Sea salt and freshly ground pepper
Preparation
- Preheat oven to 400 F.
- Place the mangos, tomatoes, and onion in the bottom of a baking dish.
- Place the trout on top, drizzle olive oil, and season to taste.
- Bake in the oven for 18 to 20 minutes, or until the desired doneness.
- Sprinkle fresh cilantro on top and serve.
