    Zucchini Noodles with Simple Pesto

    Zoodles are the perfect canvas for a variety of sauces and flavor profiles, blessed with a neutral taste that pairs well with just about anything. Making your own zucchini noodles at home is not only a creative culinary exercise but also an excellent way to introduce more vegetables into your meals in a fun and appealing way.

    Equipped with either a spiralizer or a simple vegetable peeler, you can transform the humble zucchini into delicate strands that mimic the texture and appearance of traditional pasta.

    The addition of homemade pesto, made from fresh basil, garlic, tomatoes, and a good quality olive oil, turns a simple vegetable into a luxurious and flavorful dish. This combination exemplifies how healthful ingredients can be elevated into a gourmet experience, bridging the gap between nourishing and delicious eating.

    Make it a full meal by pairing these with a simple Grilled Chicken Drumstick or kick it up a notch alongside a Grilled T-Bone Steak.

    Ingredients

    Serves: 2 Prep Time: 15 minutes Cook Time: 2 minutes

    • 2 medium zucchinis
    • 3 cups fresh basil, leaves picked
    • 2 cloves garlic
    • 1 cup fresh tomatoes, cut into small chunks
    • 2 tablespoon extra-virgin olive oil
    • Sea salt and freshly ground black pepper to taste

    How to Make Zucchini Noodles with Simple Pesto

    Using a mandoline or your best knife skills, cut the zucchinis into thin ribbon-like strips and then cut those strips into ¼-inch wide noodles.

    Place the garlic and basil in a food processor and process while slowly drizzling the olive oil until you obtain a smooth consistency. You may need more or less olive oil. Season the mixture to taste with salt and pepper and pulse again.

    Toss the zucchini noodles with the chopped tomatoes and combine with the pesto.
