    Curried Pork Chops With Honeydew And Cucumber Recipe

    Honeydew melon and cucumber cubes make a pleasantly chilled salad with just enough sweetness to play off the classic pork-and-fruit combination.

    Curried Pork Chops With Honeydew And Cucumber

    Add some pork chops grilled with a flavorful curry oil, and you’ve got a perfect sweet-spicy combination for grilling up as a quick dinner or a weekend lunch.

    If you’ve been craving curry flavor but don’t want to heat up the whole house making a big rich pot of actual curry, this is one simple and tasty alternative.

    If it’s not quite warm enough to grill yet, you could also just cook the pork chops in a skillet or using any other favorite method; you’ll still get the hint of spice from the curry and a quick and easy meal however you make it.

    For an even quicker meal, you could make the salad ahead of time and chill it until you’re ready to serve the pork chops – then just pull it out of the fridge and serve.

    And if you’re constantly struggling to find time for cooking, this is also a great recipe for salad leftovers: sliced-up pork chops make a nice change from the leftover chicken as a quick protein to throw over some fresh greens and call it lunch.

    Curried Pork Chops With Honeydew And Cucumber Recipe

    Ingredients

    • 4 pork chops
    • 1 tsp. curry powder
    • 2 tsp. olive oil
    • Sea salt and freshly ground black pepper

    Ingredients for the honeydew cucumber salad

    • 2 cups honeydew melon, cubed
    • 2 cups cucumber, cubed
    • ¼ cup extra-virgin oil olive
    • 1 shallot, chopped
    • ¼ cup fresh cilantro, minced
    • Sea salt and freshly ground black pepper

    Preparation

    1. Preheat your grill to high.
    2. Season the pork chops to taste with sea salt and freshly ground black pepper.
    3. In a bowl, combine the olive oil and the curry powder.
    4. Coat the chops with curry oil.
    5. Grill each chop for 3 to 4 minutes per side.
    6. In a bowl, combine all the ingredients for the salad and toss gently.
    7. Serve the pork chops with honeydew and cucumber salad.
