    Spicy Shrimp And Sun-Dried Tomatoes

    This recipe works well as either a simple lunch or dinner main course, and what you serve this dish with can be adjusted based on your preferences and dietary needs.

    As long as you have shrimp, you can easily pull together a complete main course with whatever produce and ingredients you have on hand. This makes this dish a great option for those nights when you’re not quite sure what to make for dinner and don’t have a ton of time to throw something together.

    • 1 lb. shrimp, peeled and deveined
    • ¼ cup olive oil
    • 4 garlic cloves, minced
    • ½ cup sun-dried tomatoes, sliced
    • 2 tsp. chili flakes
    • 1 tbsp. fresh parsley, minced
    • Sea salt and freshly ground black pepper

    Preparation

    1. Heat the olive oil in a skillet over medium heat.
    2. Add the garlic and cook until fragrant (1 to 2 minutes).
    3. Add the sun-dried tomatoes and chili flakes; cook for 1 to 2 minutes.
    4. Add the shrimp to the skillet and cook, tossing until the shrimp are no longer pink.
    5. Sprinkle with fresh parsley, toss everything one last time, and serve.
