    Citrus Steak Marinade Recipe

    Citrus fruits are available year-round. Beef is available year-round. So, why not combine them together and explore the unique flavor combination? Here is the perfect chance to do just that!

    Citrus Steak Marinade

    It is as easy as juicing an orange, a lime, and a lemon, and adding a couple of other ingredients, letting them soak together in the fridge, then setting the steaks to cook over a hot grill. You can use this marinade with poultry or pork chops too, having similar results.

    One thing to keep in mind is that the meat will be quite tender, but it will also take on that tangy-zesty citrus twang. If you want to err on the side of caution, we suggest marinating the steaks for just an hour on your first try.

    You can increase the marinating time with the next trial if you find that you can't get enough of the zesty flavor. Once the beef is grilled to perfection, you have the choice to leave it whole, cutting off small pieces for bite-by-bite dining, next to some roasted acorn squash with shallots or a baked sweet potato.

    Alternatively, you could cut the marinated skirt steak into strips for a Paleo fajita bowl, adding avocado, tomatoes, and fresh greens.

    Serve the citrus-marinated steak with quick-to-prepare guacamole or Pico de Gallo salsa - just go easy on the spice so that the citrus-soaked notes can come delicately through.

    Citrus Steak Marinade Recipe

    Serves: 4 Prep: 10 min + 2h Cook: 10 min

    Ingredients

    • Steak of your choice (i.e, skirt steak)
    • 4 garlic cloves, minced
    • ½ cup fresh cilantro leaves, chopped
    • â…“ cup olive oil
    • Juice of 1 orange
    • Juice of 1 lime
    • Juice of 1 lemon
    • 2 tbsp. apple cider vinegar
    • 1 tsp. ground cumin
    • Sea salt and freshly ground black pepper
    Citrus Steak Marinade Preparation

    Preparation

    1. In a bowl, combine all the ingredients, minus the steaks, and season to taste.
    2. Whisk until everything is well-emulsified.
    3. Place the steaks in a marinating container and pour the marinade on top.
    4. Cover and refrigerate for at least 1 hour, 2 hours max, turning every 30 minutes.
    5. Cook the steak whichever way is your favorite. Or preheat the grill to medium-high.
    6. Grill the steaks for 4 to 5 minutes per side if using skirt steaks or until their desired doneness.
    7. Let the steaks rest for about 5 minutes before serving.
