One of my favorite sandwiches is the chicken paleo BLT sandwich! It's a simple recipe that is loaded with classic flavors but uses chicken breasts as the base rather than traditional bread. Not only is it packed with protein, but it's also a great way to cut out carbohydrates and add even more flavor to the menu!
Paleo BLT Sandwiches
This is a special bacon, lettuce, and tomato sandwich made with two flattened chicken breast halves instead of the bread. I like to flavor my mayonnaise with dill and garlic but feel free to play around or simply use plain mayonnaise.
This paleo BLT sandwich is perfect with a side of sweet potato fries, zucchini fries, or even parsnip fries. All tasty and healthy options to pair with a sandwich!
Ingredients
Serves: 2 Prep Time: 20 min Cook Time: 8 min
• 2 boneless, skinless chicken breasts, cut in half
• 1 tomato, sliced
• 2 slices bacon, cut in half
• 2 ½ tablespoon homemade mayonnaise or to taste
• ½ tablespoon fresh dill, chopped
• 1 clove garlic, minced
• 2 lettuce leaves
• Cooking fat
• Sea salt and freshly ground black pepper to taste
How to Make Chicken Paleo BLT Sandwiches
Combine 2 ½ tablespoons of homemade mayonnaise, ½ tablespoon of freshly chopped dill, and 1 minced clove of garlic in a bowl. Start with ½ teaspoon of sea salt and ¼ teaspoon of freshly ground black pepper, and adjust to taste. Set aside.
Heat a skillet over medium heat. Add 2 slices of bacon cut in half and cook until crispy, about 5 to 8 minutes. Remove from the skillet and pat dry with paper towels.
Place 2 boneless, skinless chicken breasts cut in half between sheets of plastic wrap, and use a meat mallet to flatten them. Season with salt and pepper.
Using the same skillet you cooked the bacon in and using the rendered bacon fat, cook the flattened chicken breasts until well cooked, about 4 minutes per side or until they reach an internal temperature of 165°F (74°C). Remove from skillet and pat dry with paper towels.
Spread ¼ of the flavored mayonnaise on each chicken breast half. Top each with 1 lettuce leaf, 2 pieces of bacon, and tomato slices. Add more salt and pepper to taste as desired. Top with the remaining chicken breast halves to make two sandwiches.

Notes
- You can also make this using ground chicken seasoned, formed, and fried into patties instead of whole chicken breasts.Â
