- 2 chicken breasts, diced
- 2 large zucchinis, cut into zoodles
- 1 onion, sliced
- 1/2 cup dried tomatoes, chopped
- 4 garlic cloves, minced
- 1/2 cup chicken stock
- 2 tbsp. fresh basil, minced
- 1 cup full-fat coconut milk
- 1 tbsp. cooking fat
- Sea salt and freshly ground black pepper
- Melt the cooking fat in a skillet over medium-high heat.
- Add the chicken and season to taste.
