    Chicken Salad With BBQ Dressing Recipe

    This decadent salad has it all: chili-roasted sweet potatoes, crumbled bacon, crispy romaine lettuce, and a luxurious BBQ mayonnaise dressing. It’s like the salad version of a deluxe BLT, with sweet potatoes standing in for the bun to add that slightly-sweet starchy flavor.

    Chicken Salad With BBQ Dressing

    To get the dressing on this salad, you’ll need two homemade sauces already ready to go: BBQ sauce and mayonnaise.

    They’re not hard to make, but if you don’t have them ready, you could also try looking for a pre-made dressing that fits the bill (although finding a BBQ mayonnaise in a store that doesn’t have any added sugar, preservatives, or junk fats is a tall order!)

    The dressing should give you a hint that this is one salad recipe a little more involved than just tossing some lettuce in a bowl and throwing some protein on top.

    It does take some extra effort, but it’ll pay you off in flavor if you give it a chance: try it at an outdoor meal or BBQ party, and you’ll have the kids and adults alike shouting for more.

    Chicken Salad With BBQ Dressing Recipe

    Ingredients

    • 2 sweet potatoes, diced into cubes
    • 5 bacon slices, cooked and crumbled
    • 3 romaine lettuce heads, chopped
    • 1 cup cherry tomatoes, sliced
    • 3 cups cooked chicken, shredded
    • 1 cucumber, diced
    • 2 tbsp. olive oil
    • 2 tsp. chili powder
    • Sea salt and freshly ground black pepper

    Ingredients for the BBQ dressing

    • ¼ cup homemade BBQ sauce
    • 2 tbsp. mayonnaise
    • 1 tbsp. white wine vinegar
    • 3 tbsp. olive oil

    Preparation

    1. Preheat your oven to 400 F.
    2. In a bowl, combine the sweet potatoes, olive oil, and chili powder, and season with salt and pepper to taste.
    3. Spread in an even layer on a baking sheet.
    4. Bake in the oven for 30 to 35 minutes.
    5. In a bowl, combine all the ingredients for the dressing and mix well.
    6. In a salad bowl, combine the chopped lettuce, tomatoes, sweet potatoes, cucumber, bacon, and chicken.
    7. Drizzle the BBQ dressing over the salad and toss gently.
