    Kidney and Orange Stew

    The delicacy of pairing gamey proteins with the sweet tanginess of citrus is a practice found in various cuisines across cultures. The Kidney and Orange Stew recipe boasts a blend that has roots in traditional European and Mediterranean cooking. The citrus infusion not only adds a delightful tang but also helps to tenderize the kidney meat, creating a culinary fusion that has stood the test of time.

    A Fall Vegetable Salad is a great side to balance the heartiness of the stew. Additionally, Roasted Vegetables with Italian Herbs can be a delightful accompaniment.

    Ingredients

    Serves: 4 Prep Time: 15 minutes Cook Time: 25 minutes

    • 1 lb lamb kidneys, white core  removed and chopped
    • 1 onion, chopped
    • 1 clove garlic, minced
    • 1 cup chicken stock
    • 1 tablespoon white wine vinegar
    • A pinch of mustard powder
    • A pinch of cayenne pepper
    • 2 teaspoon fresh tarragon, chopped
    • Zest of 1 orange
    • 1 tablespoon orange juice
    • ¼ lb mushrooms, sliced
    • 1 tablespoon fresh parsley, for garnishing
    • Orange slices to taste, to serve
    • Cooking fat
    • Sea salt and freshly ground black pepper to taste

    How to Make Kidney and Orange Stew

    Heat a frying pan equipped with a lid over a medium heat and cook the onion and the garlic until the onion starts to soften, about 3 minutes.

    Add the chopped kidneys and continue cooking for about 3 minutes while stirring.

    Add the chicken stock together with the vinegar, mustard powder, cayenne pepper, tarragon, orange zest, orange juice and mushrooms. Stir everything well and season to taste with sea salt and freshly ground black pepper.

    Bring to a simmer and simmer for 15 minutes.

    Serve garnished with fresh parsley and orange slices.
