• 4 boneless chicken breast halves
• 1 tablespoon almond butter
• 2 tablespoon homemade mayonnaise
• 1 tablespoon lemon juice
• 1 clove garlic, minced
• 2 tablespoon cilantro, finely chopped
• 2 tablespoon slivered almonds
• Sea salt and freshly ground black pepper to taste
How to Make Paleo Almond Chicken
Preheat your oven to 375°F.
Place each boneless chicken breast half between two pieces of plastic wrap and pound them until they are approximately ¼" thin.
In a bowl, combine 1 tablespoon of almond butter, 2 tablespoons of homemade mayonnaise, 1 tablespoon freshly squeezed lemon juice, 1 minced garlic clove, and 2 tablespoons finely chopped cilantro.
Grease a baking sheet and place the chicken breasts on it. Start with a teaspoon each of sea salt and freshly ground black pepper and continue seasoning to taste on both sides. Spread the almond butter and mayonnaise mixture evenly on top.
Sprinkle each chicken breast with 2 tablespoons of slivered almonds. Bake for about 25 minutes or until the internal temperature reaches a minimum of 165°F and is no longer pink.
