    Roasted Bone-In Chicken Thighs Recipe

    Baked chicken thighs with hints of rosemary and oregano are a dish that everyone will gladly sink their teeth into. After all, what's not to love about tender, juicy bites of flavorful chicken thighs? That's the best part of the bird, right?

    There is no good reason to miss out on abundant flavor in favor of consuming boneless, skinless chicken breasts.

    Roasted Bone-In Chicken Thighs

    Sure they taste great when marinated and grilled, but they tend to run dry and become stringy or, worse yet - squeaky when they are overcooked. Thighs are nearly impossible to overcook; they are insanely foolproof and will taste excellent no matter how you prepare them.

    If your mouth isn't watering yet at the mere thought of the wafting aroma of baked chicken coming from the oven, then get back to work and get your spices ready, for herbs are what impart amazing flavor to the dish.

    Use sprigs of fresh rosemary, if you can find them, as it has the wondrous ability to improve your memory; it is a super antioxidant and also acts as an antibacterial. Rosemary is an all-around beneficial herb that you will want in your garden or your windowsill.

    For a special treat, cut up and bake some butternut squash fries to go with the baked chicken; add a small side salad, and you will have a tasty Paleo version of a diner-worthy meal.

    Roasted Bone-In Chicken Thighs Recipe

    Ingredients

    • 8 bone-in chicken thighs
    • 1 tsp. paprika
    • 1 tsp. dried oregano
    • 1 tsp. onion flakes
    • ½ tsp. garlic powder
    • Fresh rosemary sprigs
    • Sea salt and freshly ground black pepper

    Preparation

    1. Preheat oven to 375 F.
    2. Place the chicken thighs on a baking dish.
    3. Sprinkle the chicken with paprika, oregano, onion flakes, garlic, and season to taste.
    4. Lay fresh rosemary sprigs over the chicken thighs.
    5. Place in the oven and bake for 40 to 45 minutes or until chicken is cooked through and no longer pink.
