- 2 oranges, peeled and segmented
- 2 teaspoon hot sauce
- ¼ cup + 1 tablespoon extra-virgin olive oil
- 2 tablespoon fresh mint, chopped
- 24 large raw shrimp, peeled and deveined
- 4 tablespoon lime juice
- 1 cup cherry tomatoes, halved
- ½ onion, thinly sliced
- ¼ cup cilantro, chopped
- A pinch of dried oregano
- 2 avocados, cut into wedges
- Cooking fat
- Sea salt and freshly ground black pepper to taste
How to Make Shrimp Salad with Avocado and Orange
Combine together 1 tablespoon of the lime juice in a bowl with 1 tablespoon olive oil and 1 teaspoon hot sauce.
Add the mint and the shrimp and mix everything well.
In another bowl combine the remaining 3 tablespoons lime juice with the remaining ¼ cup olive oil and 1 teaspoon hot sauce.
Stir in the cherry tomatoes as well as the avocados, onion, cilantro, oregano and orange segments.
Heat your BBQ grill or a grill pan over high heat and cook the shrimp until just cooked through, about 2 minutes per side.
Serve the hot shrimp over the salad in bowls.
