    Paleo Pork Stew

    Let your slow cooker do all the work while you go about your daily life when making this delicious paleo stew. A unique blend of vegetables that includes parsnips pairs wonderfully with the sweet and salty pork. This dish is a great comfort food meal that is satisfying.

    Ingredients

    Serves: 4 Prep Time: 15 minutes Cook Time: 6 to 8 hours

    • 1 ½ lbs pork shoulder
    • 5 carrots
    • 2 onions
    • 2 celery stalks
    • 4 cups parsnips
    • 4 cups chicken stock
    • 1 teaspoon dried sage
    • ¼ teaspoon dried oregano
    • ½ teaspoon paprika
    • 2 tablespoon red wine
    • 3 tablespoon cooking fat
    • Salt and black pepper

    How to Make Slow-Cooker Pork Stew With Parsnips

    Melt the cooking fat over medium heat in a large skillet or Dutch oven. Brown the pork for 3 to 4 minutes, until browned. Pour the pork and onions into the slow cooker.

    Now, in the skillet, add red wine and deglaze the pan, scraping the bits of food from the bottom of the skillet. Then, pour this liquid into the slow cooker.

    To the slow cooker, add the carrots, celery, parsnips, broth, sage, oregano, and paprika. Add salt and pepper to taste. Stir the mixture, and cover. Cook for 6 to 8 hours on low heat.

    Taste and season if needed before serving.

    Ingredients
      

    • 1 ½ lbs pork shoulder cubed
    • 5 carrots cut into ¼-inch pieces
    • 2 onions sliced
    • 2 celery stalks cut into ¼-inch slices
    • 4 cups parsnips peeled and cut into ¾-inch cubes
    • 4 cups chicken stock
    • 1 teaspoon dried sage
    • ¼ teaspoon dried oregano
    • ½ teaspoon paprika
    • 2 tablespoon red wine
    • 3 tablespoon cooking fat
    • Salt and black pepper to taste

    Instructions

    • Taste and adjust seasoning if needed before serving.

    Notes

    • Adjust seasoning to your own preferences.
    • Use pork shoulder, pork butt, pork roast, pork steaks, or pre-cubed pork stewing meat.
    • Can be refrigerated for up to 4 days, or frozen for up to 3 months.
