As the hot weather starts settling in for good and everyone starts flocking to lunch options that they don't have to cook, it’s time to start talking about salad boredom.
You know the symptoms: the unenthusiastic resignation at the thought of yet another bowl of Romaine lettuce topped with grilled chicken breast and dressed with a basic vinaigrette.
The wistful sideways glances at other people’s burgers, fries, and sandwiches as you stare down your own pile of greens.
Salads are fast and nutritious, but it’s easy to get stuck in a rut of making the exact same bowl of lettuce and protein every time, and that can very quickly drive even the most dedicated of Paleo eaters a little bit crazy. It doesn’t have to be that way, though.
Take this recipe, for example, chicken spiced up with cumin, paprika, and chili powder and served with a fresh summer salsa that gives you juicy vegetables and creamy avocado chunks in every bite.
Adding spices and salsa to your chicken is an ideal way to add some interest to your greens – throw it over that pile of greens and see if you’re still bored of salad! It’s not a lot of extra prep time, and it’s just the thing to pull your lunchtime routine out of a rut.
Spice-Rubbed Chicken with Avocado Salsa Recipe
SERVES: 4 PREP: 15 min COOK: 15 min
Ingredients
- 4 boneless skinless chicken breasts
- ½ tsp. cumin
- 1 tsp. chili powder
- 1 tsp. paprika
- ½ tsp. garlic powder
- Sea salt and freshly ground black pepper
- Cooking fat
- Avocado Salsa (see below)
Ingredients for the avocado salsa
- 1 avocado, cubed
- 1 tomato, chopped
- ½ cup cucumber, diced
- ¼ cup red onion, diced
- ¼ cup fresh cilantro, chopped
- 2 tbsp. lime juice
- Sea salt and freshly ground black pepper
Preparation
- In a bowl, combine all the ingredients for the avocado salsa. Season to taste, cover, and refrigerate.
- In another bowl, combine the cumin, paprika, chili powder, and garlic powder, and season with salt and pepper to taste.
- Rub the chicken breasts with the cumin-chili mixture.
- Melt some cooking fat in a skillet placed over medium heat, and cook the chicken until no longer pink, about 10 to 12 minutes.
- Slice the chicken and serve with the avocado salsa on top.
