    Sweetbreads with Bacon

    Sweetbreads. The term may incite a shiver in the uninitiated, yet it elicits a passionate response from culinary enthusiasts. Their rich, creamy texture combined with a sweet and buttery flavor make them a delicacy in cuisines world over.

    And what happens when you add bacon to the mix? A depth of smoky, savory deliciousness that elevates sweetbreads to an entirely new level.

    Pairing the right side dishes with sweetbread and bacon can transform a great meal into an unforgettable culinary experience. A silky, smooth Mashed Cauliflower makes an excellent base for the pan-seared sweetbreads and crispy bacon, absorbing the flavors while offering a contrasting texture. For a lighter option, a Raw Kale Salad dressed with a sharp vinaigrette adds a fresh and peppery note that cuts through the richness of the dish.

    Ingredients

    Serves: 4 Prep Time: 25 minutes and 30 minutes Cook Time: 45 minutes

    • 1 lb lamb’s sweetbreads
    • ½ lb tomatoes, coarsely cut in chunks
    • 1 cup chicken stock
    • 1 lb bacon
    • 1 onion, chopped finely
    • 1 tablespoon fresh parsley, chopped
    • Sea salt and freshly ground black pepper to taste

    How to Make Sweetbreads with Bacon

    Place the sweetbreads in a bowl of cold salted water and let stand for 30 minutes.

    Now place the sweetbreads in a pot with new salted water, bring to a boil and let simmer gently for 10 minutes.

    Drain, let them cool so they can be handled and then remove the skin membrane.

    Preheat your oven to 350 F.

    Use the bacon to wrap each sweetbread individually, securing with toothpicks if needed. You might need less bacon than 1 lb.

    Place the chicken stock with the tomatoes and onion in a baking dish and add the wrapped sweetbread in the dish as well. Salt and pepper to taste and sprinkle with chopped parsley.

    Place in the preheated oven to cook for about 35 minutes.
