    It just so happens that we like stuffing - and stuffing things. For example, stuffed apples are a mouthwatering delicious treat, filled with chopped nuts, cinnamon, and raw honey.

    And they make for a sublime dessert, even with apple-stuffed chicken at the forefront. It is a simple, yet elegant meal, when prepared with love and attention to detail.

    Choose your favorite apples, any kind will do, from sour to sweet, and slice them as thinly as you can - for the sake of presentation and pleasant bites to eat.

    Fresh thyme is the herb of the day, and we do hope that you cook with it often! Thyme is very aromatic as it falls in the mint family, yet it belongs in so many more recipes than tea and lemonade.

    If you find the flavor too strong, simply use less, and chop it finer for better distribution over the chicken breasts. Just know that thyme is rich in Vitamins A and C and can boost your immunity to colds, and even help alleviate coughing.

    So, make this dish when you feel an illness coming on, or just make it because you love to eat and be healthy!

    There are several reasons to cook with fresh herbs, as you will gradually find out when experimenting in your own kitchen. It is also worth noting that if you can't find fresh thyme, you can opt for an herb with a similar flavor - oregano, marjoram, or savory - instead.

    Apple-Stuffed Chicken With Sweet Potatoes Recipe

    Serves: 4 Prep: 15 min Cook: 25 min

    Ingredients

    • 4 chicken breasts, boneless and skinless
    • 2 apples, thinly sliced
    • 1 tbsp. fresh thyme, minced
    • 1 tsp. fresh rosemary, minced (plus sprigs for garnish)
    • 1 tsp. ground cinnamon
    • Sea salt and freshly ground black pepper

    Sweet Potato Ingredients

    • 2 sweet potatoes, peeled and diced
    • 1 tbsp. olive oil
    • 1 tsp. paprika
    • 1 tsp. fresh thyme, minced
    • 1 tsp. fresh rosemary, minced
    • Sea salt and freshly ground black pepper

    Preparation

    1. Preheat oven to 425 F.
    2. Carefully slice each chicken breast across with a knife, but not through, so that it opens like a book.
    3. Fill each chicken breast with apple slices, sprinkle with ground cinnamon and thyme, close the chicken, season to taste, and place on a baking sheet.
    4. In a bowl, place the diced sweet potatoes, drizzle with olive oil, paprika, thyme, and season to taste.
    5. Toss until everything is well coated.
    6. Place the sweet potatoes all around the stuffed chicken.
    7. Top chicken and potatoes with extra rosemary sprigs, if desired.
    8. Place the chicken and potatoes in the oven and bake for 20 to 25 minutes, or until cooked through.
