It's not just about filling the bird; it's about satisfying a craving that's rooted in some deeply personal culinary preferences. And when it comes to a stuffing recipe, none is as revered as bacon and chestnut stuffing – a rich, smoky, and satisfyingly savory tribute to warmth and festivity.

    Bacon and Chestnut Stuffing

    This is not just any old stuffing, it's a robust accompaniment to the juicy turkey, the tender roast, or even a delightful centerpiece for a vegetable bake. This indulgent combination is so versatile and timeless, it has woven itself into the tales of numerous holiday meals, with each bite telling a story of comfort and cheer.

    You're really going to enjoy serving this paleo stuffing with Wild Mushroom Roasted Turkey or, for a more non-traditional pairing, try serving it with Peppercorn Steaks. Your guests will be stunned at the flavor explosion.

    Ingredients

    Serves: 4 Prep Time: 20 minutes Cook Time: 35 minutes

    • 1 lb chestnuts
    • ¼ lb bacon, cut into 1-inch strips
    • 2 onions, finely chopped
    • 1 clove garlic, minced
    • Cooking fat
    • Zest and juice of 1 lemon
    • Sea salt and freshly ground black pepper to taste

    How to Make Bacon and Chestnut Stuffing

    Roast the chestnuts for 20 to 25 minutes in a 400 F oven (refer to the roasted chestnuts recipe).

    Remove the shell from the chestnuts while they are still hot.

    Heat a frying pan and cook the onions with the bacon and the garlic with some cooking fat over a medium heat until the onions are soft.

    Meanwhile, mash the roasted chestnuts in a bowl with a potato masher. Break them with a spoon of fork beforehand so they are easier to mash.

    Add the mashed chestnuts to the cooked onions and bacon as well as 5 tablespoon cooking fat and the lemon juice and zest.

    Continue cooking over a medium-low heat until everything is well combined and warmed up.

    You can now use the stuffing right away in the cavity of a chicken or turkey for roasting or you can bake the stuffing separately for about 45 minutes in a 375 F oven, until nice and brown on top.
