    Caesar Dressing

    When it comes to salads, the Caesar Dressing is a classic, its perfect storm of umami, tang, and creaminess has been beloved since it emerged in the culinary scene.

    Caesar Dressing

    The history of Caesar dressing is as rich as its flavor. Legend has it that its creation was a spur-of-the-moment invention by Caesar Cardini, an Italian immigrant, in the 1920s when he needed to whip up a culinary delight with what was left in his kitchen. What emerged was a simple and delicious recipe that would spark not just a salad, but a culinary revolution.

    The bold flavors of Caesar dressing perfectly complement the smoky richness of Grilled Steak Salad or Grilled Chicken Breasts with Zucchini, and Spicy Scallop Salad. The brightness of the lemon and the savory depth of the anchovies in the dressing balance the hearty flavors of grilled proteins.

    Ingredients

    Serves: 8 Prep Time: 7 minutes

    • 1 tablespoon lemon juice
    • 2 tablespoon homemade mayonnaise
    • ½ cup extra-virgin olive oil
    • 6 garlic cloves, minced
    • 1 tablespoon homemade or Dijon mustard
    • Minced anchovy fillets
    • Sea salt and freshly ground black pepper to taste

    How to Make Caesar Dressing

    Using a blender, process the lemon juice, garlic and mustard. Add the mayonnaise and blend again.

    Slowly add the olive oil while the blender is in motion. 

    Use a spatula to scrape all that delicious dressing in a bowl, season with salt and pepper, add some more lemon juice to taste and add some minced anchovy fillets to taste.
