- ¾ cup homemade chili sauce
- 1 tbsp. Cajun seasoning
- 1 tbsp. ground cumin
- Sea salt and freshly ground black pepper
Preparation
- Preheat oven to 400 F.
- In a bowl, combine the olive oil, lemon juice, chili sauce, Cajun seasoning, and ground cumin, and season to taste with salt and pepper.
- Mix the Cajun sauce with the chicken and the sweet potatoes, and toss until well-coated.
- Grease a baking sheet and arrange chicken and potatoes in a single layer. Bake for 15 minutes.
- After 15 minutes, add the zucchini and bell pepper to the chicken and give everything a good toss.
- Place back in the oven, and bake another 15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
