    Cajun-Style Chicken With Vegetables Recipe

    Cajun-inspired dinners that taste amazing and require minimal cleanup? Yes, please! This is definitely one to add to your Paleo meal plan, and we wholeheartedly recommend making your own homemade chili sauce to go with the baked chicken breasts, sweet potato, pepper, and zucchini medley.

    You can, of course, search for a jar of Paleo-approved chili sauce at the store, though check those ingredients carefully, for they may be hiding some elements you would normally avoid, such as high fructose corn syrup or refined sugar.

    Recipes abound for chili sauce, and there are so many variations that it is easy to get overwhelmed. Just focus on the basic ingredients and tweak them to discover what you and your family like best.

    A Paleo version of chili sauce goes like this: dice ¼ cup of onion and cook for 3 minutes over medium heat in the fat of your choice, then add a minced clove of garlic and cook one minute longer.

    Next, stir into the pot: 6 oz. can of tomato paste, ¼ cup apple cider vinegar, 1 tbsp. coconut aminos, 1 tsp. chili powder, ¼ tsp. allspice, season with salt and pepper, finally adding ½ cup water - let it simmer for 30 minutes until it is the consistency of ketchup.

    Make a larger batch of chili sauce and keep it in the fridge for later in the week, or store it in the freezer for the next time it is needed. It makes the perfect dip for crispy coconut shrimp!

    Cajun-Style Chicken With Vegetables Recipe

    Serves: 4 Prep: 20 min Cook: 45 min

    Ingredients

    • 2 chicken breasts, boneless and skinless, cut into cubes
    • 2 sweet potatoes, peeled, cut into cubes
    • 1-2 zucchinis, diced
    • 1 bell pepper, chopped
    • 4 tbsp. olive oil
    • 2 tbsp. fresh lemon juice
    • ¾ cup homemade chili sauce
    • 1 tbsp. Cajun seasoning
    • 1 tbsp. ground cumin
    • Sea salt and freshly ground black pepper

    Preparation

    1. Preheat oven to 400 F.
    2. In a bowl, combine the olive oil, lemon juice, chili sauce, Cajun seasoning, and ground cumin, and season to taste with salt and pepper.
    3. Mix the Cajun sauce with the chicken and the sweet potatoes, and toss until well-coated.
    4. Grease a baking sheet and arrange chicken and potatoes in a single layer. Bake for 15 minutes.
    5. After 15 minutes, add the zucchini and bell pepper to the chicken and give everything a good toss.
    6. Place back in the oven, and bake another 15 minutes, or until the chicken is cooked through and the sweet potatoes are tender.
    7. Season to taste and serve.
