    Chicken Fajita On A Stick Recipe

    Traditional fajitas are served in Tex-Mex cuisine and consist of grilled meat and seared onions and peppers wrapped inside a flour or corn tortilla. While flour and corn tortillas are not considered Paleo, there are plenty of beef and chicken fajita recipes that serve up fajitas without the traditional tortilla.

    Chicken Fajita On A Stick

    Cooking with skewers is an easy method to grill shrimp, beef, and vegetables without creating lots of dishes or even needing to turn on the oven.  If you're using wooden skewers, be sure to soak them in water for 30 or so minutes to ensure they don't catch fire on the grill.

    These chicken fajita bites would make for tasty leftovers for lunch the next day. You can serve these with a refreshing fruit salad, a simple green salad, or a potato salad for a hearty dose of carbohydrates.

    Ingredients

    • 1 lb. chicken breasts, boneless, skinless, cut into cubes
    • 2 bell peppers, cubed
    • 1 red onion, cubed
    • 4 tbsp. olive oil
    • Zest and juice of 1 lime
    • 1 tbsp. chili powder
    • 2 tsp. ground cumin
    • 2 garlic cloves, minced
    • Fresh cilantro, minced
    • Sea salt and freshly ground black pepper
    • Wooden or metal skewers

    Preparation

    1. In a small bowl, combine and whisk together the olive oil, lime juice, lime zest, chili powder, cumin, garlic, salt, and pepper to taste.
    2. Place the chicken in a large bowl. Pour the chili-lime sauce over the chicken and allow it to marinate for 25 to 30 minutes.
    3. Thread the cubed chicken, bell pepper, and red onion onto the skewers.
    4. Preheat the grill to medium-high.
    5. Place the skewers on the grill and cook covered for 12 to 15 minutes, turning the skewers every 4 minutes or so.
    6. Garnished the chicken fajita skewers with minced cilantro and fresh homemade salsa.
