    Classic Lemon Vinaigrette

    With origins steeped in the vibrant colors and flavors of the Mediterranean, it's not just a dressing but a tradition that's transcended through generations. In modern gastronomy, where health and taste coalesce, this tangy elixir stands out as a staple, especially for those following a paleo regimen.

    The charm of lemon vinaigrette lies in its versatility. It pairs with a variety of dishes, beyond just salads, bringing them to life with a burst of zesty freshness. Try a drizzle of your lemon dressing over a Grilled Seabass with Caramelized Brussels Sprouts. For a hearty, healthy side dish to enjoy this vinaigrette with, serve it with Grilled Vegetables.

    Ingredients

    Serves: 8 Prep Time: 5 minutes

    • 3 tablespoon fresh lime or lemon juice
    • ½ teaspoon Dijon mustard, optional
    • ¾ cup extra-virgin olive oil
    • Sea salt and freshly ground black pepper to taste

    How to Make Classic Lemon Vinaigrette

    Follow the general preparation technique by combining all the ingredients except the oil and then adding the oil slowly while whisking vigorously. Using a blender will help to emulsify the vinaigrette. Shake well before using.
