    Double Chocolate Cookies

For baking enthusiasts and chocolate lovers, the allure of these cookies lies not just in their decadent taste but also in the joy of creating something truly special from scratch. With an increasing number of people looking for healthier baking alternatives, the challenge of adapting beloved recipes such as double chocolate cookies to fit dietary preferences like the paleo diet has become a popular endeavor.

For a morning treat or an afternoon pick-me-up, nothing beats a warm cookie with a cup of freshly brewed Coffee. The robust flavors of the coffee complement the depth of the chocolate, creating a harmonious blend. Served warm, as a snack alongside Homemade Yogurt, this is a treat for all of our senses.

    Ingredients

Serves: 24 Prep Time: 10 minutes Cook Time: 12 minutes

    • 1 cup almond butter
    • 1 tablespoon melted butter, ghee or coconut oil
    • 1 egg
    • ¼ cup cocoa powder
    • ¼ cup dark chocolate chips
    • 2 teaspoon vanilla extract
    • A pinch of fine sea salt

How to Make Double Chocolate Cookies

Preheat your oven to 350 F.

Mix all the ingredients well together in a bowl.

Line a large baking sheet with parchment paper, scoop out pieces of dough about 1 tablespoon in size and press them on the parchment paper in the shape of a cookie. The cookies won’t expand or change shape when cooked.

Place in the oven to bake for about 12 minutes, until just cooked.
