Grilled Lobster With Fresh Herbs

Did you know that lobster used to be a considered a cheap meat that you’d only buy if you couldn’t afford better? Times have certainly changed! Today, it’s more of a meal for a special occasion, but for those days when you want something fancy, here’s how to cook it.

You can use either live or pre-boiled lobster for this recipe, depending on what you can get. If you’re using live lobsters, just quickly cook them with the herb oil in a preheated oven before throwing them on the grill. If you’ve never worked with live (or dead) lobsters before, just take it slowly and have a lot of towels handy: removing the unwanted parts does make a mess, but it’s totally doable if you have a little patience with the process.

Once you’re done with preparing the lobsters, the rest is easy. A fresh, herb-infused oil adds flavor to the meat on the grill, and a compound butter is the only topping they need once they’re on your plate – the result is a very flavorful meal, but one that lets the lobster take center stage instead of drowning it in sauce. It’s simple but elegant, perfect for any occasion when you need to impress.

  • 4 live lobsters
  • 1/3 cup olive oil
  • 2 tbsp. fresh basil, minced
  • 2 tbsp. fresh chives, minced
  • 1 tbsp. fresh fennel leaves, minced
  • 1 clove garlic, minced
  • Lemon wedges, quartered
  • Sea salt and freshly ground black pepper

Ingredients for the fresh herb butter

  • 1/4 cup melted butter or ghee
  • 2 tbsp. fresh chives, minced
  • 1 tbsp. fennel leaves, minced
  • 2 garlic cloves, minced
Lobster preparation


  1. Preheat your grill to a medium heat.
  2. For each lobster, place the tip of a knife on the cross at the base of the head and cut the lobster in half. (If you’re using live lobsters, this will kill them)
  3. Discard the sand sac near the head. Using the tip of the knife, carefully remove the gray intestinal vein. With a small spoon, scoop out the liver and any coral or eggs.
  4. In a small bowl, combine all the remaining ingredients for the lobster, and season to taste.
  5. Baste each lobster with the fresh herb oil.
  6. Place the lobsters on the grill, cut side up.
  7. Cover and cook for about 10 minutes.
  8. In a bowl, combine all the ingredients for the herb butter.
  9. Serve the lobster with the butter and fresh lemon wedges.
