Oven Baked Pineapple-Barbecue Chicken Recipe

Ingredients
- 4 chicken breasts, boneless, skinless
- 1 bell pepper, diced
- 1 red onion, diced
- 2 cups pineapple, diced
- 1 cup homemade barbecue sauce
- ½ tbsp. dried oregano
- ½ tbsp. paprika
- ½ tbsp. extra virgin olive oil
- Sea salt and freshly ground black pepper
Preparation
- Preheat oven to 400 F.
- Brush the chicken breast with olive oil and season with oregano, paprika, and salt and pepper to taste.
- Place the chicken breasts in a baking dish.
- Brush half the bbq sauce over the chicken breasts, making sure they are well covered.
- Top the chicken with pineapple, bell pepper, and red onion.
- Drizzle the remaining BBQ sauce over the vegetables and place in the oven.
- Baked for 40 to 45 minutes or until chicken is cooked through and no longer pink.
