Roasted Chilli Dressing
Roasted chilli dressings boast a distinct depth of flavor — the legacy of time spent under the heat, coaxing out a smoldering, almost sweet, intensity. This dressing is a staple in Mexican, Thai, and Indian kitchens alike, emblematic of its universal appeal.
Unlocking the potential of your roasted chilli dressing means pairing it with the right partners. A simple Cranberry Avocado Salad becomes a festival to flavors with a drizzle of roasted chilli dressing. A Slow-Cooked Beef Brisket shredded and kissed by the heat and smokiness of roasted chilli dressing, is a guaranteed crowd-pleaser.
Ingredients
Serves: 12 Prep Time: 10 minutes Cook Time: 5 minutes
- 3 red chillies
- 10 tablespoon extra-virgin olive oil
- 3 ½ tablespoon lemon juice
- 1 bunch of finely chopped mint leaves
- Sea salt and freshly ground black pepper to taste
How to Make Roasted Chilli Dressing
Prick the chillies with the tip of a knife so they don’t blow while roasting.
Place them under the broiler until well roasted. You can also use thongs and hold them close to the flame of a gas stove.
Once roasted, put a plastic wrap on top for a couple of minutes so they steam and are easy to peel off.
Peel off the chillies, open them, remove the seeds and finely chop the flesh.
Mix thoroughly in a bowl with the oil, lemon juice and mint and season to taste.
