- 2 small onions, finely chopped
- 3 tablespoon white wine vinegar
- 4 tablespoon white wine
- 2 tablespoon cold water
- 14 tablespoon good quality unsalted butter or ghee
- A squeeze of lemon juice
- Sea salt and freshly ground black pepper to taste
How to Make White Butter Sauce
Bring the wine vinegar and white wine to a boil with the onions in a small saucepan.
Lower the heat and simmer the liquid until only about 1 tablespoon of liquid remains, about 2 minutes.
Now over a very low heat, whisk in the water and then the butter, in small parts, making sure to whisk them in well to create the emulsion.
Season with sea salt and freshly ground black pepper to taste and add a squeeze of lemon juice. Serve while hot.
