    Beetroot Salsa

    Ingredients

    Serves: 4 Prep Time: 7 minutes

    • 5 small beets, diced
    • 8 spring onions, chopped
    • 1 red chilli, seeded and chopped
    • 2 tablespoon fresh mint, chopped
    • 2 tablespoon lemon juice
    • 5 tablespoon extra-virgin olive oil
    • Sea salt and freshly ground black pepper to taste

    How to Make Beetroot Salsa

    Place all the ingredients in a bowl and mix well to combine. Season to taste with sea salt and freshly ground black pepper.
