    Bell Pepper Sauce

This vibrant and versatile condiment has become a staple in many kitchens, especially among those who value the nutritional punch of bell peppers and the flavors they bring to the table. But bell pepper sauce is not only a nutritional powerhouse, but it is incredibly versatile in the kitchen. Its sweet, slightly smoky flavor can complement a wide range of dishes, adding depth without the need for heavy seasonings.

Transform simple cauliflower rice into a flavorful side dish by mixing in some bell pepper sauce. The result is a colorful and nutritious alternative to traditional rice. Marinate chicken bacon sweet potato skewers in a bell pepper sauce-based glaze before threading them onto skewers and grilling. The sweetness of the peppers will caramelize over the open flame, creating a mouthwatering treat.

    Ingredients

Serves: 8 Prep Time: 10 minutes Cook Time: 25 minutes

    • 2 red bell peppers, seeded  and chopped
    • 3 tablespoon cooking fat
    • 1 cup water
    • 1 sprig of fresh thyme
    • ½ cup coconut milk

How to Make Bell Pepper Sauce

Heat 1 tablespoon of the cooking fat in a saucepan and sweat the bell peppers until slightly soft.

Add the water and the thyme sprig, bring to a simmer and simmer for 15 to 20 minutes, uncovered.

Remove the thyme sprig and transfer the mixture to a blender to process to a smooth puree.

Pass the sauce through a strainer back into the saucepan.

Reheat the sauce and add the rest of the cooking fat and the coconut milk. Season to taste with salt and pepper.
